Pizza is my favorite food. I don’t believe it needs much more explanation than that. I personally like making my own much better than buying them. I tend to like obscure things that I can’t find at most pizza places. Fruits, vegetables, meats, cheeses, fresh herbs, alternative sauces, nuts and seeds…literally I want to put anything and everything on a pizza. I will say that Harmony Brewing Company here in Grand Rapids, makes the absolute best pizza in my opinion. When I want pizza, that is where I am. Not to mention all the great craft beer they have to go with it.
There are plenty of ways to make pizza healthy. Such as going lighter on the cheese, using fruits and vegetables as toppings, skipping on the meats filled with sodium and saturated fats (pepperoni, sausage), and using a whole wheat crust for added fiber.
I did NOT make my own crust this time, we’ll save doughs for another day. Because making dough is hard work and I want to spend lots of time on that and give you some tips on how to make A LOT of it and store for later pizza adventures! But naan bread is a great solution to quick “pizza crust”.
Peachy Keen Pizza
Serves 2
Ingredients
2 naan breads
3 Tbsp EVOO
2 peaches (sliced)
1/2 cup shredded mozzarella
1/2 cup freshly grated parmesan
8 basil leaves (chiffonade)
¼ tsp red pepper flakes
¼ tsp dried basil
¼ tsp dried oregano
Preparation:
- Preheat oven to 400 degrees
- Top naan bread with 3 Tbsp EVOO and brush all over dough
- Top with 1/4 cup mozzarella cheese
- Sprinkle with red pepper flakes, basil, and oregano
- Top with sliced peaches
- Top with remaining 1/4 cup mozzarella cheese and 1/2 cup parmesan
- Bake at 400 degrees for 5 minutes
- Once pizza is finished, top with chiffonade basil
