No Bake Kefir Cookies

Kefir is pretty much the popular kid on the food scene right now. It’s all over social media and many food influencers are talking about it (all the cool ones anyway).

If you’ve never had kefir before, this is a great way to try it for the first time. It’s basically a fermented milk that’s essentially lactose-free and contains more probiotics than yogurt does. You can use it in smoothies, overnight oats, in dressings, and even in my personal favorite…COOKIES. Kefir likes the cold environment though because it’s filled with living organisms. Therefore, try to use it in cold/no cooking applications (like these cookies). This recipe was in conjunction with my friends over at Milk Means More.

No Bake Kefir Cookies  

Makes ~12 cookies

Ingredients:

¼ Cup Coconut Oil, Melted

2 TBSP cocoa powder

¼ Cup Honey

1 ¾ Cups Rolled Oats

1/4 Cup Kefir, plain

1/4 Cup peanut butter, smooth

Preparation:

  1. In a medium bowl, mix coconut oil, cocoa powder, honey, and oats.
  2. Mix together melted coconut oil, cocoa powder, honey, and oats into a bowl.
  3. Add kefir and peanut butter, stir until combined.
  4. Use a small cookie scoop or rounded tablespoon to scoop mixture onto parchment paper.
  5. Refrigerate for at least 30 minutes before serving.
