It’s al fresco Tuesday once again!! But this time, it’s feeling a little sad because this is the LAST al fresco Tuesday in August. It’s been a great month exploring how to do #ChickenFaster with some of my favorite chicken recipes. I hope you’ve been able to pick up some ideas and also I hope you have been able to try some al fresco chicken products. It’s easy to see why they’re one of my weekly staples.
This week I was focused on pizza. I love any pizza that has chicken on it. What I don’t love is prepping all of the chicken to just cook it again on top of a pizza. One of my favorite chicken pizzas is the classic BBQ Chicken. If you’ve never had it, it’s typically BBQ sauce, BBQ chicken, cheese, onion, and sometimes pineapple and/or peppers. It’s smokey and delicious.
When I saw al fresco had a BBQ chicken sausage that was fully cooked, I knew this was one way to do chicken faster for the week. This pizza turned out amazing and it took me less than 20 minutes from start to finish. Most of that time was spent waiting for the oven to preheat!
Try this BBQ Chicken Pizza recipe for your next busy weeknight dinner.
BBQ Chicken Pizza
Serves 2-3
Ingredients:
2 al fresco Sweet and Smokey BBQ chicken sausages, thinly sliced
1 pizza dough, either store-bought or homemade
½ cup BBQ sauce
1 ½ cups of shredded Colby jack cheese
½ red onion, thinly sliced
2 green onions, thinly sliced
Preparation:
Preheat oven to 500 degrees*. While oven is preheating, roll out dough to form your crust. Top with BBQ sauce, 1 cup of Colby jack cheese, chicken sausages, red onion, then top with remaining ½ cup of cheese.
Bake for 6-8 minutes, until crust is golden and cheese is bubbling. Finish by adding sliced green onions to the pizza. Cut and serve immediately.
*Note: It’s best to always use a pizza stone to get the crispest and most evenly cooked pizza. This is the stone I use here and it’s incredible!
