Flavors of Fall Dumplings

I am super excited about this recipe.

Turns out my tiny child-like fingers are excellent at dumpling making. You learn something new every day I guess.

I don’t venture into the dumpling/potsticker game often, but when I do, I go BIG.

My friends at JSL Foods were hosting this super awesome contest using Twin Dragon Asian Wrappers. Since their potsticker wrappers are vegan, I wanted to play into that by making a completely vegan recipe (sorry meat-eating friends, I got you next time). The next thing I wanted to do was bring some Fall Michigan produce to the mix. Because I love vegetables and why not bring another delicious veggie recipe into this world?!

So here we are, a delicious little dumpling filled with brussels sprouts, butternut squash, carrots, ginger, garlic and of course, red cabbage. Just LOOK at that beautiful all-natural color. The maple-soy dipping sauce takes these dumplings to the next level. It’s definitely a little taste of fall.

Also, these potsticker wrappers taste so fresh and homemade! They’re definitely going to be a new staple in my house.

Flavors of Fall Dumplings

Makes 24-26 dumplings

Ingredients:

For the Dumplings: 

1 cup red cabbage, finely chopped

½ cup brussels sprouts, finely chopped

½ cup carrot, grated

1/3 cup butternut squash, cooked and mashed

½ teaspoon brown sugar

1 scallion, white and green parts, finely sliced

1 teaspoon fresh ginger, grated

1 teaspoon garlic, grated

¼ teaspoon + ½ teaspoon salt

black pepper, to taste

1 package Twin Dragon Gyoza Wrappers

1 tablespoon sesame oil

For the Maple-Soy Dipping Sauce:

2 tablespoons soy sauce

1 tablespoon pure maple syrup

½ teaspoon sesame oil

½ teaspoon grated ginger

½ teaspoon finely chopped scallion

Preparation:

Place finely chopped red cabbage in a bowl and sprinkle with ¼ teaspoon of salt. Let sit while you prep other ingredients.

While the cabbage is sitting, mix all of the maple-soy dipping sauce ingredients together and set aside.

Combine brussels sprouts, carrot, butternut squash, brown sugar, scallions, ginger, and garlic in a bowl. Squeeze the excess water out of the salted cabbage by using your hands or a cheesecloth. Once water has been removed, add the cabbage to the vegetable mixture. Stir to combine all ingredients. Season with ½ teaspoon of salt and black pepper to taste.

Using a teaspoon, place a dollop of the mixture in the center of each Gyoza wrapper. Dip your finger in a cup of water and wet the entire edges of the Gyoza wrapper. Carefully fold up the sides of the wrapper into the middle to make pleats. Gently twist to seal.

Heat 1 tablespoon of sesame oil in a medium sauté pan over medium-high heat. Once the oil is hot. Gently place the dumplings, the pleated side facing up, in the pan. Cook for approximately 2 minutes. Add ½ cup of water to the pan and cover. Reduce heat to medium-low and steam for 5 minutes. Remove the water and cook until bottoms firm up again and become brown (between 1-2 minutes).
