4th of July time!!! Let’s set the stage. You were invited to a BBQ and you plan to show up with store bought dips like usual. WELL, NOT THIS YEAR! This year you’ll bring kefir guacamole because you’re fancy and you care about your friends and families gut flora. That sounds like you right? Always trying to make sure everyone gets their probiotics and calcium?? Okay, that’s me. But it can be you now too. Since kefir is 99% free of lactose, even your aunt with lactose intolerance can eat this dip.
Servings: 8 to 10
½ cup Plain Low Fat Kefir
4 ripe avocados
½ – jalapeno, seeded and chopped
½ ripe tomato, seeded and chopped
3 Tbsp cilantro, finely chopped
1 garlic clove, minced
1-2 Tbsp fresh lime juice
½ tsp kosher salt
½ tsp freshly cracked black pepper
- Slice and pit avocados. Scoop out avocado and place into a medium-size mixing bowl.
- Mash the avocados and stir in kefir and lime juice until well combined.
- Stir in jalapeno, tomato, cilantro, garlic, salt and pepper.
- Serve immediately with vegetables or your favorite chips.
